Hatch Green Chile Chicken Enchiladas

 

FOR THE SAUCE

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup chicken broth (I used no salt added)
  • 1/4 cup heavy cream
  • 2 tablespoons chopped Hatch green chiles
  • 2 1/2 cup shredded Monterey jack cheese, divided
  • Garnish: Avocado slices, green onions, fresh cilantro

FOR THE FILLING

  • 1 cup chopped or shredded cooked chicken (I used a deli rotisserie)
  • 1 14 ounce can black beans, drained and rinsed
  • 1 14 ounce can corn, drained and rinsed
  • 1/4 cup chopped Hatch green chiles (I used frozen from Trader Joes)
  • 2 ounces cream cheese, softened
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 8 soft taco size flour tortillas

Instructions

  1. Preheat oven to 350 degrees.

FOR THE SAUCE

  1. In a medium pan, melt butter over medium high heat. Whisk in flour to form a paste and cook for about 2 minutes.
  2. Gradually whisk in the chicken broth, and bring to a gentle boil, whisking occasionally. When the sauce has thickened slightly, stir in the heavy cream, green chiles, and 1/2 cup of the cheese. Stir until smooth. Remove from heat and set aside.

FOR THE FILLING

  1. In a large bowl, mix together chicken, black beans, corn, green chiles, cream cheese, and spices.
  2. Divide the mixture between eight flour tortillas.
  3. Pour enough sauce to cover the bottom of a greased 9 by 13 baking dish. Roll the tortillas around the filling, and place in the pan seam side down.
  4. Pour remaining sauce over the filled enchiladas, and sprinkle remaining cheese over the top.
  5. Bake for 30 minutes uncovered, or until hot and bubbly and the cheese is beginning to brown. Garnish with avocado, green onions and fresh cilantro.

Damn Delicious Beef Stew

 

INGREDIENTS:

  • 2 tablespoons olive oil
  • 2 pounds stew meat, cut into 1-inch cubes
  • Kosher salt and freshly ground black pepper, to taste
  • 1 pound baby red potatoes, quartered
  • 4 carrots, cut diagonally into 1/2-inch-thick slices
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • 1 teaspoon caraway seeds, optional
  • 2 bay leaves
  • 1/4 cup all-purpose flour
  • 2 tablespoons chopped fresh parsley leaves

DIRECTIONS:

  1. Heat olive oil in a large skillet over medium heat.
  2. Season beef with salt and pepper, to taste. Add beef to the skillet and cook until evenly browned, about 2-3 minutes.
  3. Place beef, potatoes, carrots, onion and garlic into a 6-qt slow cooker. Stir in beef broth, tomato paste, Worcestershire, thyme, rosemary, paprika, caraway seeds and bay leaves until well combined; season with salt and pepper, to taste.
  4. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
  5. In a small bowl, whisk together flour and 1/2 cup stew broth. Stir in flour mixture into the slow cooker. Cover and cook on high heat for an additional 30 minutes, or until thickened.
  6. Serve immediately, garnished with parsley, if desired.

Barbecue Cups

 3/4 pound of ground beef

1/2 cup bbq sauce

2 tbsp instant minced onion

one can of biscuits

3/4 cup shredded cheese

In large skillet brown beef, drain.

Add bbq sauce, brown sugar, onion.

Separate dough into biscuits

Place each biscuit in ungreased muffin cup. 

Spoon into cups

Cook at 400 degrees for 10-15 min

Sprinkle with cheese.

Frozen Pineapple Treat Disney

Frozen Pineapple Treat" on the My Disney Experience app. A rep for the park confirmed that this recipe is not the exact Dole Whip formula, which is dairy free. So, for now, the real recipe remains a mystery, but this creamy concoction will definitely hit the spot.
Ingredients
  • 1 scoop of vanilla ice cream
  • 1/2 cup pineapple juice
  • 2 cups of frozen pineapple chunks
Directions
  1. Add pineapple, ice cream and juice to a blender.
  2. Start blending at a low speed, then increase to high speed. Blend until smooth.
  3. Use a piping bag with a star tip to create a classic swirl, or just scoop dessert into bowls.
This version only takes five minutes to prepare, but if you're in search of a recipe without dairy, Dole has its own version of the treat which uses coconut milk to make it creamy.

Disney Churro Bites

Disney Parks Churro Bites
Ingredients
  • 1 cup water
  • 8 tablespoons butter
  • ¼ teaspoon salt
  • ¾ teaspoon ground cinnamon, divided
  • 1 ¼ cups all-purpose flour
  • 3 eggs
  • 1 ½ cups vegetable or canola oil
  • ½ cup sugar
Instructions
  1. Combine water, butter, salt, and ¼ teaspoon cinnamon in 1 ½-quart saucepan over medium heat. Bring pot to rolling boil.
  2. Reduce heat to low.
  3. Add flour and stir vigorously until mix forms a ball. Remove from heat and let rest for 5-7 min.
  4. Add eggs, one at a time, and stir until combined. Set aside.
  5. Heat oil in medium skillet or 1-quart saucepan over medium-high heat or until temperature reaches 350˚.
  6. Spoon dough into piping bag fitted with large star tip. Pipe 1-inch strip of dough over saucepan, cut with knife, and drop into hot oil. Repeat until churro bites fill saucepan with room to fry. 
  7. Fry churro bites until golden brown. Remove with slotted spoon or mesh spider strainer.
  8. Drain churro bites on paper towel.
  9. Mix sugar and ½ teaspoon cinnamon in medium bowl. Toss in churro bites until coated. Place on serving plate and serve with favorite dipping sauce.

Disney Toasted Cheese Sandwich

Grilled Three-Cheese Sandwich from Woody’s Lunch Box at Disney’s Hollywood Studios
Serves 4
Ingredients:
Cream Cheese Spread
  • 1/2 cup cream cheese
  • 1/2 cup shredded Double Gloucester or cheddar 
  • 2 tablespoons heavy cream
  • 1/4 teaspoon coarse salt
Garlic Spread
  • 1 cup mayonnaise
  • 1 1/2 teaspoons minced garlic
  • 1/2 teaspoon coarse salt
Grilled Three-Cheese Sandwich
  • 8 slices of artisan bread
  • 8 cheddar cheese slices
  • 8 provolone slices
Instructions:
For Cream Cheese Spread:
  1. Combine cream cheese, Double Gloucester or cheddar, heavy cream, and salt in food processor. Blend until smooth. Set aside.
For Garlic Spread:
  1. Combine mayonnaise, garlic, and salt in small bowl and stir until blended. Set aside.
For Grilled Three-Cheese Sandwich:
  1. Lay out artisan bread slices on parchment paper or large cutting board.
  2. Place 2 slices of cheddar on 4 of the bread slices. Place 2 slices of provolone on remaining bread slices. 
  3. Equally spoon cream cheese spread on slices with provolone. Gently smooth cream cheese spread over each slice.
  4. Press cheddar side and provolone side together.
  5. Heat a large skillet over medium heat for 5 minutes, until hot. 
  6. Brush both sides of the sandwiches with garlic spread. 
  7. Grill sandwiches for 2 minutes on each side, until cheese is melted and bread is golden brown.

  • @Jon, I think @ Donna meant to say, “no mention of American.” Sounds great as written, so I don’t need American.
  • It lists Provolone in the ingredients and says to put Provolone on the other side of the bread.
  • Is this the correct recipe? The Woody’s Lunchbox menu on Disney World site specifically states: Melted Provolone, Cheddar, and American on Grilled Sourdough Bread. this recipe makes no mention of provolone.
  • Love eating park foods at home. My Disney App just shared a recipe for a certain pineapple treat. It called for vanilla ice cream, pineapple juice and frozen pineapple. Yummy!
